Ingredients:
- 1 tsp. cumin seeds
- 1 tsp. coriander seeds
- 3 cardamom pods
- 1 small stick of cinnamon
- 3 cloves
- 5-6 dry red chillies
- 1/2 tsp. black pepper
- 2 tsp. poppy seeds
- 2 medium sized tomatoes
- 2-3 green chillies
- 1/2 inch ginger
- 7-8 cashew nuts
- 1 tsp. melon seeds
Note: If melon seed is unavailable, add 4-5 extra cashew nuts.
Instructions:
- Dry roast all the spices for the Spices Mix and make a fine paste of them.
- Blend all the ingredients for the Tomato Paste into a smooth paste.
- Heat enough mustard oil in a pan and fry the potatoes with some turmeric powder until they turn crispy and slightly brown.
- In the remaining oil, add 2 bay leaves, 1 tsp. Kashmiri chilli powder, and 1 tsp. turmeric powder. Fry for a few seconds.
- Add the Tomato Paste, salt, and fry for 3-4 minutes until the oil starts to release.
- Add the Spices Mix, mix well, and add water if required.
- Add the fried potatoes, mix well, and add 2 tsp. of yoghurt. Keep the flame low while adding the yoghurt.
- Add 1 tsp. sugar to balance the spices and mix well.
- Cover with a lid and cook for 10-12 minutes. Check in between and add water if needed.
- Once the potatoes are cooked, add 1 tsp of ghee and garnish with some coriander leaves.
- Niramish Aloor Dom is ready to be served with roti, porota, luchi, or polao.
