In a kadhai or pan, add the semolina and roast it over medium heat until it turns light golden in colour. This will take about 3-4 minutes. Be sure not to add any oil or ghee in this step. Once done, transfer the roasted semolina to a separate bowl.
In the same pan, add the ghee and the dry fruits. Fry them evenly for 1-2 minutes until the dry fruits are lightly browned.
Add the roasted semolina back to the pan and stir it continuously over medium heat until it turns into a beautiful golden brown color. This should take about 4-5 minutes.
Pour in 3 cups of water while stirring continuously to prevent any lumps from forming. Keep stirring until all the water is absorbed and the mixture thickens.
Add sugar and continue to stir until it dissolves completely.
Finally, add the fried dry fruits and mix well.
Transfer the sweet semolina pudding/suji halwa to a serving dish and enjoy!
